It is very similar to Flank, Skirt and Hanger steaks, with the same wide, slightly loose grain that you find with Skirt and Hanger steak. The wide grain allows for this meat to soak up any rub, butter, or marinade that you choose to use. Once it's seared, cooked and sliced thin against the grain, you will have a delicious dining experience from a highly versatile and delicious piece of grass fed and finished beef.
